My Carrot Cake Down On Sweet Street

Jammed full of fresh grated carrots and sumptuous spices my carrot cake might knock your socks off. It’s beginner friendly, whipped up with just a couple of those kitchen greats in minutes.

You will need a double batch of my Cream Cheese Icing for this beauty.

Sweet Street Carrot Cake

  • Dry Ingredients
  • 250 grams All-Purpose Flour
  • 10 grams Baking Powder
  • 6 grams Baking Soda
  • 5 grams Ground Cinnamon
  • 3 grams Salt
  • 2 grams Ground Ginger
  • 1 gram Ground Nutmeg
  • Wet Ingredients
  • 300 grams Brown Sugar
  • 200 grams Eggs
  • 144 grams Canola Oil
  • 130 grams Unsweetened Applesauce
  • 100 grams Pure Cane Sugar
  • 4 grams Pure Vanilla Extract
  • Lastly
  • 330 grams Fresh Grated Carrots

Directions

  1. Preheat the oven to 350 degrees F
  2. Prepare your pans (spray with baking spray and line with parchment paper)
  3. Prepare your mise en place (accurately measure all of the ingredients)
  4. Combine & sift the Dry Ingredients
  5. Combine & whisk to emulsify the Wet Ingredients
  6. Fold the grated carrots into the emulsified Wet Ingredients
  7. Add the Wet Ingredients mix into the Dry Ingredients, gently folding together with a rubber spatula until just combined (no large pockets of dry flour present)
  8. Pour the batter into the prepared pans
  9. Bake at 350 degrees F (15-20 minutes for cupcakes, 25-35 minutes for larger cakes. A toothpick inserted in the center will come out clean or with few crumbs)
  10. Cool completely
  11. Cupcakes can then be iced or continue on for the larger cakes.
  12. Torte the cake (slice each in half to have two even layers)
  13. Fill the center with an even layer of icing, smoothing with an off-set spatula.
  14. Top with the second layer of cake and then cover completely with a thin layer of icing (This is known as a crumb coat. Allow this crumb coat to set for about 10 minutes, in the fridge if possible, before continuing.)
  15. Apply your final coat of icing.
  16. Decorate with piping & dust with ground cinnamon to fancy it up or simply enjoy!

I always have lots of fun with my carrot cakes and so can you! Just let your creativity shine when it comes to decorating! The taco is easily made by cutting your round cakes in half and standing them on their side. Food coloring is not for everyone, but if you’re able to use it then go for it!
